As a Californian, I thought I knew well what asada is and was very excited about learning from Bricia Lopez the best ways to grill meat for tacos. What I didn’t know is that the Mexican idea of asada is much closer to the American concept of barbeque—they both refer to a kind of food but also a sort of party that you throw. About the Author

Bricia Lopez comes from a long lineage of Oaxaca Mezcal craftsmen, and grew up in her grandmother’s kitchen. Lopez is the co-proprietor of Guelaguetza. She lives in Los Angeles.
